ABOUT COOKBOOK

This cookbook is designed for home based catering. Before a recipe goes into this cookbook, it has to be able to be prepared in large quantities with a certain amount of ease. It does you no good to have recipes that require large commercial ovens or commercial stoves.
They are recipes that can be prepared in advance and hold heat well for a few hours. I take into consideration if they are easily served. Can they be prepared using a roaster cooker or my oven at home? Can they be prepared in 1 to 2 days in advance? We don't have a staff of people working for us, so can we do most of the work without hiring help? Is this dish going to be one I can sell? Does it taste better than the other dishes I have tasted? Is it cost effective? Are the ingredients easily found?
The ingredients are sometimes listed in large quantities but also in smaller quantities because you may not have a food supplier available to you. You may be going to your local grocery store to purchase your ingredients.
There are several considerations that a recipe goes through before I choose it. I have developed a number of recipes that can make more than one kind of dish. The more you use the same ingredients to prepare different foods, the more money you make.
Since space is limited and valuable, it is important to be able to use your ingredients over and over. Some food categories have just a few recipes in them. That is because some foods are time costly. Bread is one of them. You can prepare food for two events in the time it takes to bake bread for one of them.
Also one of the most important features about this cookbook is the additional help that I give at the bottom of the recipes. I give tips on how to prepare it in advance, how to store it, what is the best way to transport it, how many or how much a person will eat of it, and much more. With each recipe, I tell you if there is anything that will help you. It has taken me years to find out all of this information.
You cannot take just any recipe from a cookbook and prepare it for large crowds at home. Not all recipes in an ordinary cookbook can be prepared in a home setting with ease. Also not all recipes hold heat well. If a dish requires baking and it is supposed to have a crispy consistency, can you do it? What do you do if someone asks you for this and you can't provide him or her with the food they want? You will be preparing food 4 to 5 hours in advance before you leave plus most of the time I arrive at my destination 2 hours before serving is required. So you have to choose foods that do not dry out or become soggy. It has to taste like it has just come from your kitchen. THIS COOKBOOK IS WORTH ITS WEIGHT IN GOLD!
